Chocolate Cherry Blondies

Ingredients

  • 1 2⁄3 cup all purpose flour
  • 1 cup whole wheat pastry flour
  • 4 tsp baking soda
  • 1⁄2 tsp fine salt
  • 2 sticks unsalted butter room temp
  • 1⁄3 cup granulated sugar
  • 1⁄2 cup sucanat or brown sugar,
  • 2 large eggs
  • 1 tsp vanilla
  • 1 cup semi-sweet chocolate chips
  • 1 cup dried cherries

Directions

Preheat oven to 350. Whisk together flour, baking soda, and salt.

In a large bowl, using a mixer, beat butter and both sugars on high until pale and fluffy, 3 minutes. Beat in eggs and vanilla. Reduce speed to low and add flour mixture, and beat until combined. Stir in chocolate chips and cherries.

Press mixture into a 9x13" baking pan. Bake until a toothpick in the center comes out with crumbs attached, 28-30 minutes. Let cool completely in pan. Cut and serve.
