Vegetarian Pesto Quinoa Bowl

Ingredients

  • 3⁄4 cup cooked quinoa
  • 1 teaspoon prepared pesto sauce
  • 1 cup baby spinach
  • 1⁄4 cup diced red bell pepper
  • 4 cherry tomatoes halved
  • 3 kalamata olives halved
  • 1 teaspoon pumpkin seeds (preferably toasted)
  • 1 tablespoon crumbled feta cheese
  • 3 large basil leaves torn or thinly sliced
  • 2 tablespoons hummus
  • 1 tablespoon water

Directions

Place the quinoa in the bottom of a large bowl.

Mix the pesto into the quinoa and then top with the spinach, bell pepper, tomatoes, olives, pumpkin seeds, feta and basil.

Toss to combine.

Stir the hummus with the water in a separate, small bowl.

Drizzle over quinoa bowl and enjoy!
