Salmon Patties

Ingredients

  • 1 Can can salmon (14.75 ounce size), drained skin and bones removed (or you can crush up the bones)
  • 2 eggs
  • 1⁄2 cup breadcrumbs or oatmeal,
  • 1⁄4 cup Onion
  • 2 tablespoons mayonnaise
  • 1 tablespoon spicy mustard
  • salt and pepper

Directions

In a mixing bowl, combine salmon, eggs, breadcrumbs, onion, mayonnaise, mustard, salt and pepper. Combine well with hands.

Form into patties (I make 4 patties).

Heat coconut oil or butter in a skillet.

Place patties in skillet and fry over medium heat for about 6 minutes on each side.
