Chicken Tikka Masala

We are cooking through Jamie Oliver’s cookbook, Jamie’s Food Revolution. Tonight we had:

I have been avoiding the curry section of this cookbook because I have had so little experience cooking or eating Indian food. Because of this I have no reference on how a dish could or should taste. This is the one dish I am slightly familiar with and have prepared a couple of times before using a mix. We thought this was very good. I was not able to follow the recipe as Jamie wrote it because what I thought was Tikka Masala paste turned out to be the whole sauce. So I did not add the tomatoes or the coconut milk because the sauce I found had both in it already. I would like to try this again and use Jamie’s recipe for Tikka Masala paste. Tonight I served this dish with rice and steamed broccoli.

I really like Jamie’s method for cooking rice in an open pan. I have never had luck measuring and timing rice with a lid on. It is either too wet or burned. This way the rice is nice and fluffy, just as it is supposed to be. See page 95 of his book for all the details.
